Broth:
4 cups chicken or vegetable stock
2 tbsp miso paste
1 tbsp soy sauce
1 tsp sesame oil
1 clove garlic, minced
1 tsp fresh ginger, minced
Noodles & Protein:
2 servings fresh or dried ramen noodles (available at May Asian Market)
2 soft-boiled eggs
1/2 lb thinly sliced pork, chicken, or tofu
Vegetables & Toppings:
1 cup baby spinach or bok choy
1/2 cup corn kernels
2 green onions, sliced
Nori sheets, cut into strips
Optional: mushrooms, bamboo shoots, or chili flakes
Instructions
In a medium pot, combine stock, miso paste, soy sauce, sesame oil, garlic, and ginger. Simmer for 10 minutes to allow flavors to meld.
While the broth simmers, cook the ramen noodles according to package instructions. Drain and set aside.
If using meat, sear the slices in a hot pan for 2–3 minutes until just cooked. Tofu can be lightly pan-fried for texture.
Soft-boil eggs: simmer in water for 6–7 minutes, then cool in ice water and peel.
Add vegetables to the simmering broth for 1–2 minutes until just tender.
Divide noodles into bowls. Pour broth and vegetables over the noodles. Top with protein, sliced eggs, green onions, corn, and nori. Add optional toppings as desired.
