Ingredients (serves 2–3)

Protein:

  • 1/2 lb chicken breast or thigh, sliced thinly, or tofu for a vegetarian version

Vegetables:

  • 1 bell pepper, sliced

  • 1 cup broccoli florets

  • 1 cup snow peas or snap peas

  • 2 cups baby bok choy or napa cabbage, chopped

  • 2 cloves garlic, minced

  • 1 tsp fresh ginger, minced

  • 2 green onions, sliced

Sauce:

  • 3 tbsp soy sauce

  • 2 tbsp oyster sauce

  • 1 tsp sesame oil

  • 1 tsp rice vinegar

  • 1 tsp sugar or honey

  • 1 tsp cornstarch mixed with 2 tbsp water

Other:

  • 2 tbsp neutral oil (peanut, vegetable, or canola)

  • Cooked jasmine rice or fresh egg noodles

Instructions

  1. Heat a wok or large skillet over medium-high heat. Add 1 tbsp oil.

  2. Add your protein and cook until browned and just cooked through. Remove and set aside.

  3. Add remaining oil to the pan. Sauté garlic and ginger for 30 seconds until fragrant.

  4. Add the vegetables, starting with the firmer ones (broccoli, bell peppers) and stir-fry for 2–3 minutes. Add the leafy greens last.

  5. Return the protein to the pan. Pour in the sauce and toss everything together. Cook 1–2 minutes until the sauce thickens and coats the vegetables.

  6. Serve hot over jasmine rice or toss with noodles. Garnish with green onions.
